Easter Sunday - Domingo de Pascua


What a lovely day to start my blog. Today we will hunt chocolate eggs around the garden.
On the island the weather has been very nice during Easter, so we went to the beach, had forest walks and a lot of rest. But today it´s cool and cloudy so the best way to start the morning is having a hot cup of Earl Gray tea and delicious banana and chocolate muffins baked by Erin, our home pastry masterchef.



Ingredients:
  • 2 Cups whole-wheat pastry flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup brown sugar
  • 1/3 cup olive oil
  • 2 ripe  mashed bananas
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chips

Preheat the oven 180ºC / 350ºF
Mix together the flour, baking soda and salt and set aside.
In a bowl, beat sugar and oil, then add the mashed bananas.
Stir in the water and vainilla and mix thoroughly.
Add the flour mixture, along with the chocolate chips and stir to mix all together.

Fill each muffin tin halfway with the batter. Bake for 20-30 minutes until they are golden brown. Insert a toothpick into the center and if it comes out clean they are ready.
Let them cool on a wire rack .

Domingo de Pascua, qué día más encantador para dar comienzo a mi blog. Hoy toca búsqueda de huevos de chocolate por el jardín.
El tiempo ha estado genial durante la Semana Santa, ha habido playa, paseos por el monte y descanso. Pero hoy está fresco y nublado así que lo ideal es comenzar la mañana con una humeante taza de té Earl Grey y unos deliciosos muffins de chocolate y plátano hechos por Erin, que es la repostera chef de la casa.

Ingredientes:
  • 240 gr. harina de repostería integral
  • 1 1/2 cucharadita de bicarbonato
  • 1/2 cucharadita de sal
  • 240 gr. azucar de caña integral
  • 80 ml. aceite de oliva
  • 2 plátanos escachados
  • 60 ml. agua
  • 1 cucharadita de extracto de vainilla
  • 240 gr. de pepitas de chocolate

Calentar el horno a 180º C/350ºF 
Mezclar la harina, el bicarbonato y la sal y reservar.
En otro recipiente mezclar el azúcar y el aceite, añadir seguidamente los plátanos escachados.
Añadir el agua y la vainilla y mezclar bien.
Añadir la mezcla de harina que teníamos aparte junto a las pepitas de chocolate y remover toda la mezcla.

Llenar con la masa cada hueco del molde de muffins hasta la mitad. hornear durante 20-30 minutos hasta que estén dorados. Para comprobar que estén bien hechos introducir una varilla de horno o una brocheta en el muffin y si sale seco y limpio estarán listos.
Sacar del molde y dejar enfriar sobre una rejilla.
