We hate loooove Brussel sprouts... I´ve tried several recipes and we didn´t find them palatable at all until now. Erin liked this recipe so much that I had to tell her to stop eating them when I took them out of the oven otherwise we wouldn´t have enough for our lunch...
Brussels sprouts are a superfood: high in Vitamin C and vitamin K which promotes healthy bones,
prevents calcification of tissues, serves as an antioxidant and
anti-inflammatory agent, and is essential for proper brain & nerve
function. Its high fiber content lowers cholesterol and it´s a good source of folic acid. Do I need to say more? :D

Las coles de Bruselas son lo que se conoce como "superalimento": tienen un alto nivel de vitamina C y vitamina K que promueve la salud de los huesos previniendo su descalcificación, es un agente antioxidante y antiinflamatorio y ayuda a una correcto funcionamiento cerebral y nervioso. Su alto contenido en fibra ayuda a bajar los niveles de colesterol y es un buen suministro de ácido fólico. ¿Necesito decir más? :D
Caramelized Brussel sprouts
1/4 cup/60 ml. olive oil
3/4 tsp. salt
freshly ground pepper
3 tbsp. maple syrup
1. Preheat the oven to 190ºC/375ºF/Gas 5
2. Remove old or yellow outer leaves from the sprouts in case you are using fresh Brussel sprouts. Cut off the stems and cut lengthwise.
3. In a bowl toss the sprouts, oil, salt and pepper and mix until well oil coated.
4. Arrange them in a large oven tin.
5. Roast for 15 minutes. Stir the sprouts with a wooden spoon to even the roasting.
6. Continue roasting for another 30 minutes. Stir them again and pour maple syrup all over.
7. Roast for 15 minutes more.
The Brussel sprouts can be roasted in advance and reheated or eaten at room temperature the following day (keep them in the fridge). They can fit into many recipes.
I hope that all of you who didn´t like Brussel sprouts will look at them in a different way from now on. ;D

Coles de Bruselas caramelizadas
800 gr. coles de Bruselas (pueden ser congeladas)
1/4 taza/ 60 ml. aceite de oliva
3/4 cucharadita de sal
pimienta recién molida
3 cucharadas de sirope de arce
1. Calentar el horno a 190ºC/375ºF/Gas 5
2. Limpiar las coles de hojitas viejas o amarillentas en el caso de que fueran coles frescas. Cortar los tallitos y cortar las coles a lo largo.
3. En un bol mezclar las coles con el aceite, la sal y la pimienta hasta que estén bien cubiertas.
4. Colocarlas en una bandeja grande de horno.
5. Asar durante 15 minutos. Remover las colitas con una cuchara de madera para que se asen homogeneamente.
6. Continuar asando durante 30 minutos más. Remover de nuevo y echar el sirope de arce por encima.
7. Asar unos 15 minutos más.
Las coles de Bruselas se pueden dejar asadas y recalentar o comer a temperatura ambiente al día siguiente (mantener en la nevera). Van bien de acompañamiento en multitud de recetas.
Espero que a aquellos a los que no les gustaran las coles de Bruselas las vean con otros ojos a partir de ahora. ;D
