Mother´s Day - Día de la Madre

The first Sunday of May is Mother´s Day by us. 

Mum is not just the one who is pregnant and give birth. Mum is somebody who cares after a living being and love him or her without distinction... biological babies, adopted, from other species... 
Said that, let me introduce my kids: Erin, Kitty, Sally, Sam, Joe and Rayo. I also included a picture of our dear Edward, who left us a couple of months ago but who will be in our hearts forever. Our furry babes are rescued from the street or adopted from shelters. Rayo, the Florida turtle, is not furry but was rescued from a road...


Hoy, primer domingo de mayo celebramos el día de las madres por aquí. 

Mamá no es sólo aquella que da a luz, mamá es aquella que cuida y ama a un ser vivo, sin distinción de que sea hijo biológico, adoptado, de otra especie... 
Dicho esto, les presento a mis nenés: Erin, Kitty, Sally, Sam, Joe y Rayo. También incluyo a Edward que nos dejó hace unos meses pero que siempre estará en nuestros corazones. Nuestros peludos son rescatados de la calle o adoptados del refugio Apanot en Tenerife. Rayo, la tortuga de agua no es peluda pero fue rescatada cuando cruzaba la carretera...





Families use to go to a restaurant to have lunch on this day but this year, since the weather is so nice, Erin preferred to prepare a delicious meal for us and stay alfresco at home. The recipe chosen was veggie skewers with Thai - cilantro rice.

La costumbre por aquí suele ser que la familias se reúnan y salgan a comer fuera pero este año, como el tiempo está tan agradable, Erin prefirió preparar un delicioso almuerzo para disfrutar en la terraza al aire libre. La receta elegida fue pinchitos de verduras con arroz Thai de cilantro.












Veggie Skewers

Ingredients:
  • 8 ounces seitan, cut into 1" pieces
  • 1 small red or white onion
  • 1 green pepper, seeded and cut into 1 " pieces
  • 1 1/2 cups pineapple, cut into 1" pieces
  • 8 ounces cherry tomatoes
  • Sweet and sour sauce (see instructions below)
Instructions:
  1. Preheat a grill.
  2. Skewer seitan, onion, pepper, pineapple and tomatoes. I skewed two of each.
  3. Wet a paper towel with oil, brush the grill.
  4. Place skewers on grill and rotate four sides (2 minutes approx.).
  5. Brush skewers with sweet and sour sauce and continue cooking until grill marks appear. Remove from grill.

Thai - cilantro rice

Ingredients:
  • 1 cup Thai rice
  • 1 tsp. salt (I use Maldon salt)
  • 1 tbsp. olive oil
  • 1 tbsp. lemon juice
  • 2 tbsp. fresh cilantro, finely chopped
  • 1 big spring onion, thinly sliced
  • 1/3 cup chopped raw almonds
Instructions:
  1. Cook the rice following the instructions of the manufacter.
  2. Once the rice is ready add olive oil, lemon juice, cilantro, scallions and almonds. Fluff with a fork.

Sweet and sour sauce

Ingredients:
  • 3/4 cup water
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 3 tbsp. ketchup
  • 2 tbsp. cornstarc
Instructions:
  1. In a saucepan whisk all ingredients together.
  2. Heat the sauce over medium-high heat until it comes to a boil.
  3. Reduce heat to medium-low heat and cook, whisking frequently, until the mixture has thickened and big bubbles appear on the surface.

In the afternoon we had tea and hot chocolate with a delicious batch of cinnamon rolls, but you´ll have to wait to other post for the recipe ;D.

  1. Happy Belated Mother's Day, Sandra! And happy ¡Cinco de Mayo! :-) How fun to see your all your beautiful children, and I send you hugs and heartfelt condolences on your loss of Edward.

    I think Erin's plan to prepare and enjoy a home-cooked al fresco meal was a brilliant one, and she created one that looks too pretty to eat! Almost. :-) It looks absolutely delicious! Your Mother's Day sounded perfect - as well it should, for a perfect mom like you! :-) Sending my love to you and your sweet family!

    1. Dear Laurie!!! Thanks a lot for your beatiful wishes. I hope you enjoyed Cinco de Mayo with delicious vegan fajitas ;-). For us the 5th of May is Liberation Day and mark the end of the occupation by Nazi Germany during World War II in The Netherlands. A lot of things to celebrate on this day then :-D!
      Also thanks for your sweet words for Edward, he is the white doggy on the picture. We adopted him from the shelter being already a grandpa and we knew he was ill but that didn´t stop us from loving him (he lived during almost his all life in the shelter after being hit by a car and left on the road....). He lived two and a half year with us and made us really happy. We miss him a lot but the important thing is that he lived his last days knowing what a home full of love is <3.
