In Spain the most important day for families to gather is Christmas Eve. In our family, old and young join at one of my aunts home.

En España el día más importante de la Navidad en el que se reunen las familias es Nochebuena (víspera de Navidad). Jóvenes y mayores nos reunimos en casa de una de mis tías.
We are so grateful because my dear auntie spent hours cooking and prepared a vegan menu for the three of us, consisting in veggie filled bread, battered tofu and sausages, asparagus soup, roasted soy with veggies and potatoes and as dessert a delicious apple cake.

Estamos súper agradecidos porque mi tía pasó horas cocinando y preparó un menú vegano para nosotros, consistente en pan relleno de verduritas, tofu y salchichas rebozadas, crema de espárragos, delicias de soja con papas y champiñones y de postre una riquísima tarta de manzana.

I was drooling over your description of the beautiful vegan feast your sweet aunt created for you - what a lovely thing for her to do! (She looks just as lovely, and so youthful and fun!) Everything sounded absolutely delicious - think I could borrow her next year? :-)
